The reason Geralt names all his horses Roach has been revealed in the latest Witcher novel, Crossroads of Ravens. Originally released in Polish, the novel's English translation explains that Geralt's horses are mares, and the name Roach is a humorous comparison to a less desirable fish, similar to how a customer might choose a mare over a stallion.
