PSA: You can adjust your mouse sensitivity in Resident Evil Requiem, but the setting's not in an obvious place

Capcom has clarified that mouse sensitivity settings for Resident Evil Requiem can be adjusted within the Options menu under Camera settings for each character. While first-person and third-person camera speeds can be modified, the game lacks an FOV slider and does not support higher resolutions like 2560x1600.
